A typical Greek meal consists of a variety of spreads and dips  served either as appetizers or as accompaniments to one or another of the main dishes.

At the present time, three recipes for Greek dips can be found in these pages. The first is Taramasalata which is made from carp roe  and is traditionally served  with bread and trimmed scallions for the Clean Monday feast.

The second is Scorthalia or garlic sauce which is typically served as an accompaniment to  boiled beets, fried zucchini or fried cod fish.   While Greek garlic sauce is traditionally served on Clean Monday, it is also prepared all year round. 

The third is Eggplant and yogurt dip.  A light dip combining the mixed flavors of smoked eggplant, mint, and lemon.
