Quince Jam

 

 

 

 

 

 

This lovely jam also makes a great topping for vanilla ice cream or eaten with plain yogurt. The recipes makes enough to fill two 8 ounce jars.

 

Ingredients

2 quinces (approximately 1 pound or 450 grams)

1- 1/3 lbs  (600 grams) sugar

2 cups water

1 Tablespoon lemon juice

1/4 cup blanched and halved almonds

 

Directions:

  1. While waiting for the water to boil, peel the quinces and grate them coarsely.

  2. Drop the grated quince into the boiling water, reduce heat and simmer, covered until soft, approximately 15-20 minutes.

  3. Add the sugar and continue to cook stirring, over medium heat until the syrup is thick. Towards the end, add the lemon juice and the almonds. To test for readiness  drop a little syrup onto a saucer. If the drops do not spread, setting point has been reached.

  4. When slightly cooled, pour into sterilized jars.
