Quick and Easy Cheese Pie

 

There are about as many different recipes for cheese pie as there are women making them. This recipe was given to me by someone living in Santorini a beautiful island in the Aegean Sea.  It is quick and easy to prepare and perfect for a simple lunch when accompanied by  a "Greek salad" (tomatoes, cucumbers, green peppers, onions, feta, and olives, oregano, salt pepper, red wine vinegar and the best olive oil you can find).

Ingredients:

6 strudel leaves

10 ounces (300 grams) crumbled feta

10 ounces (300 grams) grated Kasseri cheese ( gruyere can be used in its place)

1/2 cup melted butter

5 eggs, beaten

6 ounces (200 ml) club soda

 

Directions:                         Preheat oven to 350oF (180oC)

 

1. Butter a 13" x 9" ( 33cm x 23cm) pyrex.

2. Place three sheets of strudel leaves on the bottom.  Crumple them--do not place them flat.

3.  Distribute the cheeses  evenly on top.

4.  Once again crumple the remaining three sheets of strudel leaves over the cheese and puncture the strudel all over with the prongs of a fork.

5. Pour the melted butter over the strudel leaves.

6. Pour the beaten eggs on top.

7. And finally pour the club soda on top of it all.

8.  Place in the oven and bake for 35-40 minutes.  Check after 20 minutes.  If it is browning too quickly, cover with aluminum foil and continue baking.

 

Any left over cheese pie can be reheated in the microwave or frozen for later use.
