Mushrooms in Olive Oil

 

Ingredients: 

  • ½ lb. small button mushrooms

  • 4 tablespoons olive oil

  • 1 ½  tablespoons water

  • salt and pepper

  • juice of one lemon

  • ½ tsp dried thyme

  • 2 cloves garlic, crushed

  • 5 tablespoons finely chopped parsley

 

Directions: 

  • Clean mushrooms and cut large ones in half.

  • Pour the oil and water into frying pan and add all ingredients except the mushrooms.  Bring to a boil and add the mushrooms and simmer approximately 10 minutes or until most of the liquid has evaporated.

  • Pour into serving dish and allow to cool.
