Green beans in tomato sauce

 

This is a traditional way of cooking vegetables.

 

Ingredients:

  • 1 lb. green beans, ends removed and washed
  • 1 can chopped tomatoes
  • 1 onion, chopped finely
  • 1-2 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 tsp sugar
  • salt and pepper to taste

Directions:

  1. Sauté the onion in the olive oil until transparent.  Add the garlic and sauté  for one minute more.
  2. Add the remaining ingredients, stir, cover and simmer for approximately 1/2 hour.  Remove the cover periodically to see that there is enough liquid remaining.  If necessary add additional water.
  3. After 1/2 hour check to see that the green beans are tender and that the sauce has thickened.
  4. Serve at room temperature.
