Green beans in
tomato sauce |
This is a traditional way of cooking
vegetables.
Ingredients:
- 1 lb. green beans, ends removed and
washed
- 1 can chopped tomatoes
- 1 onion, chopped finely
- 1-2 cloves garlic, minced
- 1/4 cup olive oil
- 1 tsp sugar
- salt and pepper to taste
Directions:
- Sauté the onion in the olive oil
until transparent. Add the garlic and sauté for one minute more.
- Add the remaining ingredients, stir,
cover and simmer for approximately 1/2 hour. Remove the cover
periodically to see that there is enough liquid remaining. If
necessary add additional water.
- After 1/2 hour check to see that the
green beans are tender and that the sauce has thickened.
- Serve at room temperature.
