There are many variations of this Greek sauce.  It can  also be prepared from boiled potatoes, lima beans, or ground walnuts.  I prefer the lighter version  made with soft breadcrumbs which is known as "skordostoupi".

Ingredients:

3-4 cloves of garlic

½ tsp salt

2-3 tbs wine vinegar

1 cup soft breadcrumbs

¼ cup water

5 tbs olive oil.

 

Directions:

Place all ingredients in an electric blender and blend until smooth.  If it is too thin add a little dry breadcrumbs.
