Fassolada

 

The national food dish of Greece is Fassolada or Greek Bean Soup.  It is a hearty meal when accompanied by fresh crusty bread, feta*, and olives.

 

Ingredients:

1 1/2 cups of white beans (Great Northern) rinsed, soaked overnight and drained
8 cups of water
2 carrots, diced
1 onion, diced
2 stalks celery, diced
2 -3 tablespoons tomato paste
1  garlic clove, minced
1/4 cup, olive oil
salt and pepper to taste
oregano (optional)

Directions:

1. Place drained beans in a large soup pot, cover with water, add 1 tablespoon olive oil. Bring to a boil and then lower heat and simmer for one hour.  Drain the beans.

2. Add the pre-cooked beans and all ingredients except the salt, pepper, and oregano to a large soup pot and bring to a boil.

3. Lower heat and simmer 2-2 1/2 hours, adding more liquid if necessary, until beans are tender.  Add the seasonings 10 minutes before soup is ready.

*Traditionally, the feta is sliced and placed on an oblong dish.  Olive oil, pepper and oregano are then sprinkled over it.
