Boiled Shrimp

 

Large fresh shrimp in their  shells are  placed in a saucepan with salted boiling water and boiled until the shrimp change color--approximately 2-3 minutes. They are then rinsed under cold water, drained and placed on a platter with cut lemon.  Local custom does not require removing the vein and boiling the shrimp in their shells retains more of their flavor. 

 

Allow at least 4 shrimps per person.
