Ingredients:

1 ¾  cup flour

½ tsp baking soda

½ tsp baking powder

pinch of salt

8 Tbs unsalted butter, softened

1 cup sugar

2 large eggs

1 tsp lemon zest

1 tsp orange zest

1 ½ cups hazelnuts, roasted, skinned, and ground

1 cup whole unsalted pistachio nuts.

  Directions:     Preheat oven to  350oF (180oC)

1.  Sift together the flour, baking soda, baking powder and salt in a small bowl.

2.  Cream butter and sugar in mixer until fluffy.  Beat in eggs and zests.

3.  Stir in flour and lastly, stir in nuts.

4.  Divide the dough into three equal parts.  On a floured board with floured hands,  shape the dough into three 1 inch thick logs.  Place on a cookie sheet placing them 3 inches  apart.  Bake  approximately 25 minutes or until firm in center.  Let cool.

5.  Reduce oven to  275oF (140oC)  Cut logs  at an angle into  ½  inch (1.2 cm) slices. 

6.  Place slices on a baking sheet and bake 10 minutes on one side and then 10 minutes on the other side.  Cool on wire racks.  

Note:  The baking time might vary due to differences in ovens.
