Preparation:

The beets and leaves  should be washed well.  First the leaves are placed in salted boiling water and allowed  to boil for approximately 20 minutes.  They are then removed and the beets are placed in the water and boiled until soft. This will take any where from 30 minutes to an hour depending on the size of the beets.

While warm,  remove the skin  from the beets by rubbing them with your hands under cold running water.  Then slice them.

Serving:

The sliced beets are placed on the serving dish and the leaves  on top. Add olive oil and salt and serve at room temperature accompanied by garlic sauce.
